Its not metal but Half Moon Run's album Sun Leads Me On sounds perfect. It's warm, crisp and always entertaining. The youtube video doesn't do it justice:
If it had to be metal, it'd have to be Depths by Oceano. That album was an absolute beast when i was 16:

I really love how the production sounds on the Drawing Last Breath LP especially on vinyl. Also I love the snaresound on Shattered Realms "Broken Ties... Spoken Lies". that snare sounds like a ton of brick ! for me Pantera : Far Beyon Driven.

I'd probably go with Boris' Pink album; listening to it, it just sounds so big and raw. Heck, pretty much anything released by Boris sounds so good. O'Brother's Endless Light sounds so gorgeous. Like others, I'll probably drop in here and there as I remember other albums.

Geez, there are so many for me...to name a couple...Ozzy - Diary of a Madman, The new Gov't Mule - Revolution come, Revolution Go, Expires Pretty Low and God's Hate Mass Murder jump out at me (right now, anyway)...
Queensryche's Operation Mindcrime was mentioned earlier, that one was fantastic...Cradle of Filths Godspeed on the Devils Thunder was done really well also...
